We racked off the pinot gris today. It smelled and tasted wonderful. Very pleased with the flavors coming from this young block of fruit. It is back in stainless to settle again. We will probably rack off again sometime after the new year.
In the meantime the pinot noir is settling nicely in the barrel. The flavors have continued to be surprisingly deep and complex given the cool weather we had. These wines are developing quite nicely. We are also using some new barrel combinations that will bring some additional characteristics to the wine.
